Mushrooms Fill in the Blanks for the Meat Free

I am not a vegetarian, but I love mushrooms. Their textures can vary so wildly, from meaty portabellos to delicate, barely-there thinly sliced oyster mushrooms, to firm and chewy enokis… I really need to cook more with mushrooms.
I’m trying to eat less meat and I fucking hate mushrooms. HATE. I try and I try, and the only way I can stand them is cream of mushroom soup and diced up tiny and mixed with meat (like in dumplings or a pasta sauce). FUCK YOU, MUSHROOMS. You’re like meat with a stale Jell-o texture and you taste like the dirt you grow in.
One of the guidelines I live by is to avoid eating gray slimy things. Another guideline I live by is if dey’s buxom, I fuxom.
Both have served me well.
